family dinner

I've always wanted to make chicken thighs and have them not burn or anything. well I found an awesome recipe for Crock pot Chicken Cacciatore on About.com. here is the link if you're interested: http://busycooks.about.com/od/chickenthighrecipes/r/cpcacciatore.htm

Note: if you want to substitute something for the dry red wine some good substitutes are white grape juice or water. I used water because we were out of white grape juice. and we also didn't have cornstarch so I substituted flower; but, if you do substitute flower then the ratio is 1Tbs cornstarch to 2Tbs flower.

Also, due to our elevation in Rexburg, Id (and that my chicken was thawed before starting) I cooked it in our crock pot on low for 6 hrs. instead of 7 and the chicken was tender, juicy and delicious. I HIGHLY recommend this recipe; I just wish i'd had a bigger crock pot and more chicken to put in it.
